3 Easy Chinese Vegetable Recipes to Warm Your Tummy This Winter! 3道简单素食中菜谱温暖过冬!

We've got a golden harvest this year in China, plenty of diverse vegetables and juicy fruits. It's a great opportunity for us to prepare some delicious veggie dishes. Today we take you to a few easy Chinese vegetable recipes!

今秋中国可谓是大丰收,蔬果盆盈。可趁机制作鲜美的素食菜肴呢!今天我们就给你带来几个简单实用的素食菜谱!


Fried Veggies: Chinese Yam + Wood Ear + Carrot + Cucumber

炒时蔬:山药炒木耳

Often regarded as a kind of food medecine, Chinese yam does brunch of good deeds to your health. It's rich in Dopamine, which functions as a chemical of happiness feeling. Likewise Wood ears are often used as a folk medicine. You might not find these two veggies easily in other countries. They are the two typical local specialities. While carrots and cucumbers enrich the colors of the dish, offering orange and green on top of black and white.

山药常常用来被认为是一种中药,对人体有各种好处。山药含有丰富的多巴胺,可以帮助大脑神经分泌一种令人愉悦的物质。而木耳同样也被认为是一种民间食疗蔬菜。这两样植物在中国比较容易找到,属于中国的特产之一吧。这道菜里还可以加入胡萝卜和黄瓜,在黑白的基础上增加了橙色和绿色。


Prepare the wood ears

准备木耳


Put 10-20 dried wood ears into water for around 30 minutes, so that they could raise and absorb enough water. Optionally, you can cut the roots of the ear when they grow bigger. The roots are positioned in the center of the piece and feels a bit harder than the rest of the ear.

将 10 到 20 朵干木耳在水中泡发约 30 分钟。如果你不喜欢吃位于木耳中部硬硬的根,可以用剪刀剪掉。


Peel a Chinese yam, (half) a carrot, and (half) a cucumber and cut them into cubes.

一根山药、一个或半个胡萝卜、一个或半根黄瓜刨皮,切成块状。


Heat the pot and pour 2-3 spoons of oil.

热锅下油,下油的量约为两到三匙。


Throw everything in, stir and fry for 3-5 minutes.

倒入所有蔬菜,翻炒约 3-5 分钟。


Add some salt and maybe a pepper. It's ready!

加盐,爱吃辣的话加辣就做好啦!





Easy, right? Basically you can fry many greens in the same way, such as pak choi, cabbage, celery, spinach, radis, paprika and so on. You choose what veggies you like and just fry them!

很简单吧?其实,很多蔬菜都可以用同样的方法翻炒,比如说青菜、卷心菜、芹菜、菠菜、萝卜、甜椒等等。挑选你喜欢的蔬菜开炒吧!

Taro in soja sauce

红烧芋头

Soja sauce is probably the most common ingredient throughout China. It goes magically with countless of food, of weak or strong taste. The dark soja sauce colors dishes and the normal soja sauce flavours. You can find both in a supermarket, a fresh market or a local grocery store.

酱油可能是中国最常见的调味品了吧。无论是味道很淡的食物,还是个性很强的食物,都可以跟酱油搭档。老抽增添红色的外观,而生抽会增加咸香味。这两种酱油随处可见:超市、农贸市场或是小便利店都可以买到。


We bring you today a recipe of taro in soja sauce with simple ingredients: a few taros, soja sauce and dark soja sauce, optionally you can also prepare a clove of garlic, a slice of ginger, a small chili pepper and some spring onion as spices.

今天我们向你介绍一道简单的红烧芋头,只需简单的原料:几个芋头、老抽和生抽。如果你想让味道更加浓郁,还可以准备一瓣大蒜、一片老姜、一个辣椒和几根葱作为香料。


Peel the taros and cut them into cubes, you could cook them with water beforehand

芋头去皮后切块,可以事先用水煮熟。


Wash and chop all the other veggie spices

将其他所有蔬菜香料洗净切碎。


Heat 2 spoons of oil in a large wok

加热炒锅,滴入两调羹油。


Put 2 in the pot and fry them until the good smell spreads out

将 2 中的香料倒入锅中翻炒,直到香味四溢。


Put the taros in the pot and fry for 30 seconds

锅中倒入芋头,翻炒约 30秒。


Add 3 bowls of water and cook the wok for around 15 minutes, with medium fire after when water is boiling

加入 3 碗水,水开后继续中文烧 15 分钟


Before the sauce turn thick, add two spoonfuls dark soja sauce and a spoon of soja sauce.

在汤汁变浓稠之前,加入两调羹老抽和一调羹生抽。


Put out the fire when the sauce is thick. It's ready!

收汁关火。完成!

Sweet potato soup

红薯汤

You can of course cook a local vegetable in a western way! A bowl of warm sweet potato soup keeps your stomach comfortable and satisfied. If you seek for a more complex savour, carrots and pumpkins are good companions.

当然,中国的蔬菜也可以用西式方法烧制!一碗暖暖的红薯汤暖胃美满。如果你追求丰富的味觉,也可在红薯汤中加入胡萝卜和南瓜。


Peel a few sweet potatoes, half a carrot and a slice of pumpkin and cut into cubes

挑几个红薯去皮,半个胡萝卜和一片南瓜。全部切块。


Cook everything with water for around 15-20 minutes

将所有蔬菜在水中煮约 15-20 分钟。


Puree the cooked cubes in a blender

将煮熟的茎块在粉碎机中打烂。


Mix the puree with hot milk and a half spoon salt. And it's ready!

加入牛奶与半匙盐一起加热。完成!
